What I love about this chicken and broccoli stir fry recipe is that it’s easy to make (it’s a strong theme with any recipe on this blog), and it tastes great.

Part of the reason this recipe tastes so great is because you make the sauce ahead of time, and set it aside.  It helps it thicken a bit on it’s own before you add it to the chicken and broccoli.

Ingredients

  • 3 frozen uncooked chicken breasts
  • 3 Tablespoon soy sauce
  • 2 Tablespoon ketchup
  • 1 Tablespoon brown sugar
  • 2 teaspoon chili sauce
  • 2 teaspoon cornstarch
  • 2 teaspoon sesame oil
  • 4 cloves garlic minced
  • 1 Tablespoon ginger minced
  • 2 heads broccoli chopped
  • 1 cup low fat chicken broth

Instructions
 

  • Whisk together the soy sauce, cornstarch, ketchup, brown sugar and chili sauce. Reserve.

To cook the chicken:

  • Lightly spray a non-stick large wok with olive oil spray.
  • Add frozen chickens and cook on medium-high heat until cooked through, about 20 minutes.  Remove from the wok and cube the chicken. Return to the pot.

To cook the rest of the meal:

  • Heat sesame oil with the cooked chicken. Add in the garlic and ginger and cook about 1 minute. Add broccoli and toss to coat.
  • Add in the chicken broth, cover and cook about 5 minutes.  Stir in the reserved sauce to combine all together.
