Quick and easy side dishes are everything when you are pressed for time.  This easy orzo and feta salad is just that…so easy to make and tastes amazing.  Just throw everything in a bowl and you have a great side dish for your family.  What’s easier than that?

I am a sucker for an easy side dish.  I finally went to Ponce City Market here in Atlanta a few weeks ago.  One of the coolest parts of it is the food.  

There are so many options to choose from, you can just grab different things at each place and eat a smorgasbord of food.  It’s so much fun to see what everyone chooses to eat.

This cold salad was inspired by a prepared salad that you can buy at the Ponce City Market.

I had it there and it was so delicious, I knew I could make it at home.  And even though it didn’t taste exactly the same, it was pretty darn close.

P.S…if you like cold salads as side dishes, try this healthy black bean and feta salad.

I love trying to copy restaurant recipes.  I haven’t done it often (this hearty beef taco bake is my favorite copycat recipe).  

I also love getting inspired by restaurants too.  There are so many recipes out there that can be made at home – you just need a little imagination and time to try them out.

But it’s not hard when they are cold salads like this one.  I’m obsessed with this recipe…it’s so easy to make and tastes so good!

In a medium sized bowl, add all the ingredients and mix together.  When the salad is made, serve immediately.  It really is that easy!

  • 1 cup feta cheese crumbled
  • 1 medium red onion chopped
  • 2 medium tomatoes chopped
