When you don’t have time to cook dinner, try this slow cooker easy beef stew recipe. All you have to do is chop a few veggies (you can do this the night before), and dump everything into the slow cooker. Cook for 6-8 hours and a delicious dinner will be on your table when you get home from work.

Slow Cooker Easy Beef Stew
Ingredients
- 1 pound skirt steak
- 1 Tablespoon kitchen bouquet
- 2 Tablespoons garlic salt
- 1/2 Teaspoon pepper
- 3-4 cups low-sodium beef broth
- 1 pound potatoes cubed
- 4 medium carrots roughly chopped
- 3 stalks celery roughly chopped
Instructions
- Spray your slow cooker with olive oil spray. Coat the steak with the kitchen bouquet on both sides (do this over the sink).
- Place it in the slow cooker and add the garlic salt and pepper.
- Add the potatoes, celery and carrots to the slow cooker.
- Add in the beef broth (enough to cover about 1/2 of the steak).
- Cook on low for about 6-8 hours, stirring occasionally. Shred the beef and serve immediately. Adjust the seasonings, if necessary.

Way too much pepper. It was all we could taste. My husband who puts pepper on everything thought was too much and I warned him ahead of time to taste before he put pepper on it. It was easy and will definitely make again but with much less pepper.

Hi Amy – You are right! I’m sorry about the confusion. I had 12 servings in the WW Recipe Builder, not 6 that shows on the recipe card in the recipe. I am updating that now. Even for 7 points, it’s delicious!
It’s actually 7 Weight Watchers points per serving.
You could also use flat iron steak if you can’t find skirt steak. They are similar.
What cut of steak is “skirt” steak. What other names is this called?

I made this tonight ! Delicious! I might try a little less pepper next time , maybe 1/2 tbsp. Still a big hit with the family !

It’s a liquid seasoning that you can buy. It’s usually found at the grocery store near the spices section.

I made this today. I think the 1 tb of pepper may be a mis print next time i would start with 1/2 tsp and adjust
