Slow Cooker Pulled BBQ Chicken

Pulled chicken doesn’t have to take hours in a smoker to make.  You can make it with this easy slow cooker pulled BBQ chicken recipe.  This uses an amazing homemade BBQ sauce recipe and is SO easy to throw together for your next get together.

Get togethers can be tough while you are on Weight Watchers.  Trust me, I understand.  

You never know what other people will be making, and you don’t want to feel like a burden when asking them to make you something you can eat.  And what’s worse, there are people who still think that healthy food tastes like dirt.  But that just isn’t the case!

This easy pulled BBQ chicken recipe is so easy, yet it will wow your guests (or you can take it to your party this weekend).  And it’s only 3 SmartPoints per serving!  While this recipe does make a good amount, you can double it if you are planning on taking it to a party or hosting friends.

Also, if you like your chicken to be drenched in BBQ sauce, like in the pictures, then use 1 batch of the BBQ sauce.  If you don’t like it as drenched, you can scale back on how much sauce you use.  It’s totally up to you and your preferences.

I love how versatile this recipe can be.  You can use it naked (like the images here), on a sandwich, on a salad, in a burrito or tacos.  So many options!  How would you make this recipe?  I would either use it on a sandwich or burrito/tacos.  Nope…totally tacos.  Always tacos.

 

To make this slow cooker pulled BBQ chicken recipe:

Spray the slow cooker with the olive oil spray.  Add the chicken breasts to the bottom of the slow cooker.  Sprinkle the chicken with salt and pepper.  Add the BBQ sauce.

Cover and cook on high for about 6 hours.  When the cooking is complete, shred the chicken and serve immediately.

  • 1 pound boneless chicken breast
  • 1 batch homemade BBQ sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 spray olive oil spray

    ABSOLUTELY DELICIOUS! We made ours, and made smashed potatoes to put under it! 🙂 If I could send you an image I would. It was absolutely fantastic. We had left overs, and my husband make a wrap with it for lunch (for work).
