This recipe is healthy, easy to make and perfect for the whole family.  It’s also only 4 Freestyle  points per serving (including the orzo salad).

I love throwing something in the slow cooker and just letting it cook while I am at work.  It makes the decision on what to make for dinner that night SO much easier. 

And knowing that I don’t have to cook or chop anything really helps me get through the work day.

Weeknights are busy.  That’s why it’s so great to have some easy slow cooker recipes in your weekly routine.  If you make the teriyaki sauce ahead of time, this recipe is SO simple to throw together.

The best part is that it can cook while you are out at work. And this is one of the best kid friendly recipes out there.

I love using my slow cooker and use it almost weekly.  One of the recipes that I absolutely love (besides this slow cooker teriyaki chicken and tomato orzo salad is my slow cooker salsa chicken tostadas recipe.

 To make this slow cooker teriyaki chicken and tomato orzo salad recipe:

Teriyaki Chicken

Spray your slow cooker with cooking spray.  Add in the chicken breasts.  Then add in the chicken broth.  Top the chicken with the teriyaki sauce.  Put the lid on and cook on LOW for 8-10 hours.

Remove the chicken once it’s done cooking and shred it.  Stir the chicken with the sauce to fully combine.

Tomato Orzo Salad

Once the chicken has about 30 minutes left to cook, heat a medium saucepan over medium heat filled with water.  Bring to a boil and add the orzo.  Cook for 10 minutes.

Meanwhile, heat a non-stick skillet over medium heat.  Add the garlic, cherry tomatoes, and chopped greens and saute until the greens have wilted.

Strain the orzo and add in the sautéed vegetables.  Add the Parmesan cheese and stir to combine everything.  Spoon out 1 cup of the salad with the shredded teriyaki chicken.

Teriyaki Chicken

Tomato Orzo Salad

  • 1 cup orzo uncooked
  • 1 Tablespoon garlic minced
  • 1 container grape tomatoes chopped
  • 1 cup mixed greens chopped
  • 1/2 cup Parmesan cheese shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
