Vegan Chocolate Pudding

Chocolate desserts don’t have to be complicated or a lot of SmartPoints on Weight Watchers.  This vegan chocolate pudding is a perfect example of a recipe that only takes 3 ingredients, takes about 5 minutes and is so delicious, you won’t realize it’s healthy.

One of the first things I noticed when Weight Watchers unveiled their Beyond the Scale program was that almost everything that had artificial sugar in it was about double the points.  I don’t know about you, but cake just isn’t that important if it’s going to cost me like 10 SmartPoints per slice.  No thank you!

Do I think that cutting back on artificial sugars is a good idea?  Yes!  Absolutely.  But I also have a hard core sweet tooth and need something to help curb those cravings when they happen – that isn’t going to kill my Weight Watchers progress.

So, coming up with an easy and delicious dessert has been a bit of a challenge.  But here is something you might not know about me!  I love a good challenge.  I don’t back down and I will do whatever I can to win said challenge.  I wanted to find something easy but yet delicious.  And chocolate was something that is a must for this challenge.

I realized that my sister has used a recipe very similar to this to make Paleo ice cream.  I had to jump on this chance to make a pudding type of dessert instead of ice cream.

I might be the only person on the planet who isn’t a huge fan of ice cream (Halo Top is a different story).  It probably has something to do with my sensitive teeth and cold things really bothering me.  I told you, I’m probably the only person who isn’t a fan of ice cream.

So, pudding is the answer to my sensitivity issues.  I LOVED this pudding – so delicious.

This recipe is 3 SmartPoints per serving, 1 cup.

Ingredients

  • 2 large ripe bananas broken apart
  • 1 medium avocado chopped
  • 4 Tablespoons unsweetened cocoa powder

Instructions

  • In a blender, place all ingredients in and mix until combined.
  • Place in the refrigerator or freezer for about 20 minutes to make it colder, if you would like.  Serve immediately.

Notes

You can add honey to sweeten this up if needed. Just remember that altering the recipe will change the SmartPoints value.  Adding honey is not vegan, so if you are following a vegan diet, honey will not work for you.

    The avocado is good to add the creaminess, but the banana adds the sweetness. I would try it if he likes all the ingredients in this. It’s so easy to make (you can make it into ice cream too). Honey isn’t an ingredient in the original recipe – I put it as a note if you want it sweeter, but it was never a main ingredient.

    Just banana and cocoa would be different, not as pudding-y. I haven’t ever found any good vegan “yogurts” but I love rice milk, almond milk. Many use soy but I am allergic to soy.

    Avo is awesome because it has such a great texture – so creamy – and not an overwhelming taste. A good healthy fat and does work with so many things!

    Some day I hope to afford a Vita Mix. Sigh! So many great recipes would work better than they do in my Wal-Mart blender. (we can of course all “turn a blender on”, but all blenders are not created equally)

    Does this taste very sweet as is? I love doing desserts with a banana base but wonder about banana + avocado. My Dad loves sweets and just does not want to change his diet (despite a, yes, enormous heart attack!) but he loves every ingredient in this pudding, so I am crossing my fingers and saving this recipe!! :0)
    Ooh and honey isn’t vegan. So maybe a stevia or other for a bit of sweet?

    Avocado is a delightful thing. This pudding doesn’t taste like avocado at all – more banana tasting than avocado. It’s so good and that smoothie sounds wonderful!

    I definitely suggest that you try it…I’d love to know your thoughts when you do. And how does no one in your house like chocolate. That is un-American! At least this is healthy chocolate!

    It makes it creamy and delightful. You can definitely not use the avocado if you are worried about the taste or texture, but it’s a great added ingredient that you wouldn’t normally expect.

    I have seen avocado popping up in a lot of sweet treats lately. I made a smoothie over the weekend with avocado and banana, cocoa powder, etc, it was delicious! I was shocked because I was sure it was not going to taste good.

    Sounds interesting, I will have to try it! My problem is that no one in my house likes chocolate so I can’t have it around (otherwise I’ll eat it ALL!)

    Also, I’m not a fan of ice cream either. I want it maybe twice a year!

    I would never think to use avocado! I have such a sweet tooth right now, I’m going to try this as an alternative.

    So I have been thinking about this. Just take out the avocado (it just makes it creamy). If you want it creamy, you could maybe add a tiny bit of milk or plain yogurt? That might still work. Or you just take out the avocado – that might be easiest.

    Try it and let me know! I loved it, but Jeremy wasn’t a huge fan. He liked it but he isn’t a huge fan of bananas, so it sort of backfired.
