Ingredients

  • 5 eggs
  • 5 egg whites
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups fresh spinach chopped finely
  • 1 cup feta cheese
  • 1/2 medium green pepper chopped finely
  • 1/2 medium red pepper chopped finely
  • 1/2 cup scallions chopped
  • 1/4 cup low fat cream cheese

Instructions

  • Preheat the oven to 350 degrees.
  • Coat a muffin pan with cooking spray.  Beat the eggs, egg whites, water, and salt and pepper.  Stir in spinach, feta, peppers, scallions and cream cheese. Mix until combined.  Spoon into the prepared muffin pan.
  • Bake until set, about 18-20 minutes.

Notes

You can add in different veggies, like mushrooms or onions.
