Turkey Sausage and Spinach Mini Quiches

Ingredients

  • 10 eggs beaten
  • 1 cup spinach chopped finely
  • 1/2 medium onion chopped
  • 3 cups Jimmy Dean Turkey Sausage crumbled
  • 2 oz chedder cheese Reduced Fat shredded
  • 1/2 medium tomato chopped
  • 1 teaspoon olive oil

Instructions

  • Preheat oven to 350 degrees.
  • Heat a non-stick pan on medium-low and add in the olive oil.  Add the onion, spinach and turkey sausage. Saute until the onion is translucent and the spinach has wilted.
  • Meanwhile, mix the eggs, cheese and tomato together in a large bowl.  Add in the other ingredients to combine.
  • Pour the mixture into a muffin pan that has been sprayed with olive oil spray. Cook for 18-20 minutes or until the eggs are cooked through and comes out clean with a toothpick.

Notes

If you are using a mini muffin pan, please use 2.  You can also use 1 regular muffin tin instead if you want to.
