- 1 lb ground chicken
- 2 1/2 Tablespoons balsamic vinegar
- 2 teaspoons soy sauce
- 3 Tablespoons ketchup
- 3 Tablespoons sugar
- 3 Tablespoons vegetable oil
- 3 cloves garlic minced
- 2 medium carrots thinly sliced
- 3 cups snow peas
In a large bowl, mix the ground chicken with 1/2 tablespoon balsamic vinegar and salt. Set aside. In a smaller bowl, mix together 2 tablespoons of balsamic vinegar, soy sauce, ketchup, 2 tablespoons sugar, 1/2 cup water and salt.
Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook through. Break it up as you cook it. Place the cooked ground chicken on a plate and set aside.
Heat the remaining tablespoon of vegetable oil in the skillet. Add the garlic and carrots. Cook about 2 minutes, or until the carrots are cooked. Add in the chicken and the soy sauce mixture and mix together, about 5 minutes. Add the snow peas and mushrooms, and mix together. Cook about 2 minutes more.
