  • 2 slices whole wheat bread torn into pieces
  • 1/2 small onion quartered
  • 1 medium carrot quartered
  • 1 pound lean ground beef
  • 1 pound lean ground turkey
  • 1 large egg
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 Tablespoon ketchup
  • 1 Tablespoon apricot jam


  • Preheat oven to 375
  • Pulse the bread in a food processor until finely ground. Transfer to a large bowl.  Next, pulse the onion and carrot in the food processor until finely chopped. Transfer to the large bowl.
  • Add the turkey, beef, egg and the curry powder, salt and pepper. Mix by hand until combined. Shape into 4 small meatloaves on a foil lined baking sheet.
  • Mix the ketchup and chutney in a small bowl and brush over the meatloaves. Transfer to the oven and bake until just cooked through, about 20 minutes.  Serve immediately.
