Ingredients

For the Slow Cooker:

  • 1 pound boneless chicken breasts
  • 1 spray olive oil spray
  • 2 Tablespoons garlic salt
  • 1 Tablespoon black pepper
  • 1-2 cups chicken broth

For the Pasta:

  • 8oz package orzo
  • 2 Tablespoons minced garlic
  • 1 pack grape tomatoes halved
  • 4 Tablespoon Parmesan cheese grated

Instructions

  • Add all the Chicken ingredients in the slow cooker.  Cook on low for 6-8 hours, or until fully cooked.  Once it's finished cooking, shred the chicken and set aside.
  • About 30 minutes before the chicken is finished cooking, cook the orzo according to the package directions.  Meanwhile, heat a small non-stick skillet to medium heat.  Add the minced garlic and tomatoes.  Cook until the tomatoes have burst and the garlic is fragrant.
  • Drain the orzo when it's finished cooking.  Add in the cooked chicken and the garlic and tomatoes.  Stir to combine.  Add in the Parmesan cheese, if using.  Serve immediately.
