Slow Cooker Teriyaki Chicken and Tomato Orzo Salad

Ingredients

Teriyaki Chicken

Tomato Orzo Salad

  • 1 cup orzo uncooked
  • 1 Tablespoon garlic minced
  • 1 container grape tomatoes chopped
  • 1 cup mixed greens chopped
  • 1/2 cup Parmesan cheese shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

Teriyaki Chicken

  • Spray your slow cooker with cooking spray.  Add in the chicken breasts.  Then add in the chicken broth.  Top the chicken with the teriyaki sauce.  Put the lid on and cook on LOW for 8-10 hours.
  • Remove the chicken once it's done cooking and shred it.  Stir the chicken with the sauce to fully combine.

Tomato Orzo Salad

  • Once the chicken has about 30 minutes left to cook, heat a medium saucepan over medium heat filled with water.  Bring to a boil and add the orzo.  Cook for 10 minutes.
  • Meanwhile, heat a non-stick skillet over medium heat.  Add the garlic, cherry tomatoes, and chopped greens and saute until the greens have wilted.  
  • Strain the orzo and add in the sauted vegetables.  Add the parmesan cheese and stir to combine everything.  Spoon out 1 cup of the salad with the shredded teriyaki chicken.
