Ingredients

Grilled Salmon Salad

Lemon Vinaigrette Dressing

  • 2 Tablespoons olive oil
  • 1 Tablespoon lemon squeezed
  • 1/4 teaspoon salt
  • 2 Tablespoons red wine vinegar
  • 1/4 Tablespoon DIjon mustard

Instructions

Grilled Salmon Salad:

  • Preheat the oven to 400 degrees.  Cook the salmon fillets according to the package directions.
  • While the salmon cooks, throw the rest of the salad ingredients in a bowl together.  Toss and divide onto 2 bowls.  
  • When the salmon is done cooking, add 1 filet to each salad bowl. Top with 2 Tablespoons of the Lemon Vinaigrette.

Lemon Vinaigrette:

  • In a small bowl, combine all the vinaigrette ingredients together.  Whisk everything together.  Serve immediately or store in an air-tight container in the refrigerator for up to 4 days.

Notes

For lower SmartPoints, use less dressing.
For the salad, you could add other ingredients like dried cranberries for a more sweet salad.  Or you could add mushrooms and green pepper slices for something more savory.  The options are endless!
