Stuffed Apple Cider Muffins

  • 2 apples diced. Any sweet apples would work.
  • 1/2 cup apple cider
  • 1 1/2 cup whole wheat flour
  • 1 egg
  • 1/2 cup old fashioned rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 Tablespoon cinnamon divided
  • 1/2 teaspoon salt
  • 1 teaspoon nutmeg
  • 1 1/2 teaspoon vanilla extract
  • 1/3 cup brown sugar
  • 1 cup unsweetened applesauce


  • Preheat oven to 350 degrees.
  • In a small skillet, cook the apples with the 1/2 cup apple cider and a pinch of cinnamon at medium-low heat. Cook until it gets nice and carmelized.
  • In a medium bowl, whisk together flour, oats, baking soda, baking powder, salt and spices.
  • In a large bowl, whisk together the egg and the brown sugar. You don't want to have any lumps. Add in the apple sauce, apple cider and vanilla extract. Whisk until combined.
  • Add in the dry ingredients to the wet ones, mixing until combined. Fold in the apples and mix together.
  • Pour the mixture into a prepared muffin pan and cook for about 15-18 minutes.
