Preheat oven to 350 degrees.
In a small skillet, cook the apples with the 1/2 cup apple cider and a pinch of cinnamon at medium-low heat. Cook until it gets nice and carmelized.
In a medium bowl, whisk together flour, oats, baking soda, baking powder, salt and spices.
In a large bowl, whisk together the egg and the brown sugar. You don't want to have any lumps. Add in the apple sauce, apple cider and vanilla extract. Whisk until combined.
Add in the dry ingredients to the wet ones, mixing until combined. Fold in the apples and mix together.
Pour the mixture into a prepared muffin pan and cook for about 15-18 minutes.
