Ingredients

  • 3 lbs boneless chicken breasts
  • 1 onion chopped
  • 6 cloves garlic minced
  • 1 Tablespoon ginger minced
  • 1 1/2 teaspoons fish sauce
  • 2 1/2 teaspoons salt
  • 2 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons ground turmeric
  • 1 1/2 teaspoons ground coriander
  • 3/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 15 oz can coconut milk
  • 5 large carrots chopped
  • 3 cups broccoli florets
  • 1/2 cup frozen peas
  • 1 container of mushrooms
  • chopped cilantro for garnish

Instructions

  • Place the chicken breasts in the slow cooker. Add the onion, garlic, ginger and spices.  Cook on low for 10 hours.
  • About halfway through cooking, add the coconut milk, mushrooms, broccoli, peas and carrots.
  • Take the chicken breasts out and shred them. Add them back to the slow cooker and continue cooking until the veggies are cooked, about 4 more hours.
  • Serve immediately.

Notes

You can add rice or cauliflower rice, but that will affect the SmartPoints value.
