In a medium-sized pot, add the olive oil, garlic and onion. Cook until the onion is soft and translucent. Add the rest of the ingredients including the spices and bring to a boil. Once it's boiling, lower the heat and simmer for about 10 minutes or until everything has combined.
Serve immediately or allow to cool and store in the refrigerator for about a week.
