Healthy Pumpkin Snickerdoodles

  • 3/4 cup light butter softened
  • 1/2 cup white sugar divided
  • 1/2 cup brown sugar
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon vanilla
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 2 Tablespoons pumpkin pie spice divided
  • 1 teaspoon salt
  • 1 Tablespoon ground cinnamon divided


  • In a small bowl, mix together the butter, 1/4 cup sugar, brown sugar, eggs, and vanilla extract.
  • In a medium bowl, combine the flour, baking soda, cream of tartar, 1 Tablespoon pumpkin pie spice, salt, and 1/2 Tablespoon cinnamon. Mix until combined. Add the wet ingredients to the dry and mix well.
  • In another small bowl, combine the remaining sugar, pumpkin pie spice and cinnamon.
  • Make 48 balls of dough. Cover each ball with the sugar and spice mixture. Place on a prepared cookie sheet(s) and bake for 8-10 minutes.


You can flatten the cookies as well if you don't want them as ball-like as mine.
