Healthy Pumpkin Snickerdoodles

Ahh pumpkin season is upon us!  And what better way to celebrate fall than with these healthy pumpkin snickerdoodles.  These cookies are so delicious, you won't realize that they are healthy...and your family members will all love them as well!

Ingredients

  • 3/4 cup light butter softened
  • 1/2 cup white sugar divided
  • 1/2 cup brown sugar
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon vanilla
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 2 Tablespoons pumpkin pie spice divided
  • 1 teaspoon salt
  • 1 Tablespoon ground cinnamon divided

Instructions

  • In a small bowl, mix together the butter, 1/4 cup sugar, brown sugar, eggs, and vanilla extract.
  • In a medium bowl, combine the flour, baking soda, cream of tartar, 1 Tablespoon pumpkin pie spice, salt, and 1/2 Tablespoon cinnamon. Mix until combined.
  • Add the wet ingredients to the dry and mix well.
  • In another small bowl, combine the remaining sugar, pumpkin pie spice and cinnamon.
  • Make 48 balls of dough. Cover each ball with the sugar and spice mixture. Place on a prepared cookie sheet(s) and bake for 8-10 minutes.

Notes

You can flatten the cookies as well if you don't want them as ball-like as mine.
