Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 Tablespoons ground cinnamon
  • 3/4 teaspoon salt
  • 4 medium bananas mashed
  • 3 large eggs
  • 3 Tablespoons light butter melted
  • 1 1/2 Tablespoons honey
  • 1 Tablespoon apple cider vinegar
  • 1 medium lemon zested
  • 1/4 cup pecans chopped

Instructions

  • Preheat the oven to 325 degrees and line a muffin pan with 12 paper liners.
  • In a large bowl, mix together the all-purpose flour, baking powder, baking soda, cinnamon and salt.  In a medium sized bowl, mash the bananas.
  • In a small bowl, mix together the eggs, butter, honey, apple cider vinegar, and lemon zest.  Stir in the bananas and lightly fold in the wet ingredients into the dry ingredients until just combined. Fold in the chopped pecans.
  • Divide the batter among the muffin liners, filling them up.  Place in the oven and bake for about 45-50 minutes, or until a toothpick comes out clean.  Let the muffins sit for about 5 minutes, and then serve immediately.
