  • 1 Tablespoon olive oil
  • 1 pound mild ground sausage
  • 1 medium onion chopped
  • 1 Tablespoon garlic minced
  • 2 packages sliced white mushrooms
  • 2 Tablespoons tomato paste
  • 8 cups low-sodium vegetable stock
  • 2 cups water
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • 2 15oz cans diced tomatoes undrained
  • 1 15oz can chickpeas drained and rinsed
  • 1 package fresh 3-cheese torellini
  • 1 1/2 Tablespoons red wine vinegar optional
  • 1/3 cup chopped fresh parsley


  • In a large stock pot, heat half of the oil over medium heat.  Add the sausage and cook, breaking up with a wooden spoon, until the sausage is fully cooked (about 15 minutes).  Drain and set aside.
  • Add the remaining olive oil to the pot.  Add the onion, garlic and mushrooms and cook for about 10 minutes, or until the mushrooms have released their juices.  Stir in the tomato paste and cook 1 minute.  
  • Add the vegetable stock, water, salt, pepper, diced tomatoes and chickpeas. Bring to a boil. Reduce the heat and simmer for about 5 minutes.  Add the tortellini and cook for about 8 minutes, or until they are done.  Remove from heat and stir in the cooked sausage and red wine vinegar (if using).  
  • Scoop out 1 1/2 cups of soup into bowls and serve immediately.
