My birthday was last week and I can say that this is the first year that I have felt older.  Do you know what I mean?  I know that I have gotten older each year (obviously), but I never actually had that feeling that I was older.  I didn’t even really feel older when I turned 30.  But 32?  I feel so much older now.  Maybe that’s because I have so many friends who are either pregnant or are having their first or second child.  And I am no where near ready for that huge life change.

So many people tell me to wait until we are ready to have kids (and we will…don’t worry), but I also feel the clock is ticking and I’m not getting any younger.  But I don’t want to rush into anything.  Does that make sense?  It’s so scary to know that we aren’t ready to have kids, but that there is a clock ticking too.

I’m trying not to stress about it – what happens if I never feel the “baby fever” people talk about? – but it’s hard not to think about it when most of your friends have kids or are pregnant.

Zucchini Pizza Poppers

Over the weekend, I decided to do something to help my anxiety and get my mind off getting older.  With the Super Bowl coming soon, I wanted to make another Weight Watcher friendly appetizer.  And these zucchini pizza poppers are fantastic and so simple.

Zucchini Pizza Poppers

All you need are some zucchinis, marinara sauce, and cheese.  Simply slice the zucchini to your desired size.  Sprinkle a small amount of salt and pepper on each zucchini slice.  Spoon on the marinara sauce on each of the slices.  Sprinkle cheese and bake at 300 degrees until the cheese is melted.  Enjoy these immediately – they cool off quickly.

Ingredients

  • 2 large zucchinis sliced
  • 1/2 cup Make-Ahead Marinara Sauce
  • 1/4 cup cheese shredded.
  • salt and pepper to taste

Instructions

  • Preheat oven to 300 degrees.
  • On a prepared baking sheet, place the sliced zucchinis.  Sprinkle with salt and pepper.  Scoop marinara sauce and place on each of the zucchinis.
  • Add cheese to each zucchini, and bake for 10 minutes, or until the cheese is melted.
  • Serve immediately.

    I have a post on the very subject of having children of my own in my drafts. I hear ya! I LOOOOVE zucchini, it’s my favorite. I have had something similar pinned for a while but never made them. That needs to change!
