I think lunch can be one of the most challenging meals of the day, especially if you are out and about. No matter how much I meal plan, I too struggle with lunches.
Despite the fact that my office has an amazing cafeteria where I could get virtually anything I could think of or possibly want. I love quick and easy meals, don’t you?
So, you can imagine how hard it can be to find something to eat each afternoon, especially something healthy. This chicken salad recipe is also kid friendly!
While there are plenty of healthy options at my office cafeteria, the temptation for bad foods is real. I have to keep my blinders on when I’m walking around the cafeteria.
They have specials each day including Wing Wednesday, which is so hard to walk away from…let me tell you.

Almond Chicken Salad
Ingredients
- 12 oz canned chicken drained
- 1 container Light & Fit Greek Vanilla non-fat yogurt
- 1 cup plain low-fat Greek yogurt
- 1 cup grapes chopped
- 1/4 cup almonds sliced
- 8 English muffins optional
- lettuce optional
- tomato optional
Instructions
- In a large bowl, combine all the ingredients except the English muffins. Stir to combine.
- Toast the English muffins, if using, and place some of the chicken salad on the bottom side of the English muffin. Dress with lettuce and tomato, if using. Serve immediately.
