Appetizers on Weight Watchers can be a challenge, but it doesn’t have to be.  These chicken nacho bites are easy to make and are only 1 Freestyle point per serving (1 chip) on Weight Watchers.  What is better than that?  Not much!

The Super Bowl is almost here.  Are you ready to party?  But really, are you ready?  

These nacho bites should be able to help you keep those Freestyle points in check, but without feeling like you are depriving yourself.  

Yes, you might not be able to eat all the appetizers and dips at the party, but you can still enjoy yourself.

To make this chicken nacho bites recipe:

Preheat oven to 350 degrees.

Heat a large non-stick over medium heat.  Add the chopped onions and ground chicken.  Cook, stirring constantly and breaking up as you cook it, until the chicken is cooked.

Add the drained tomatoes and the taco seasoning.  Stir to combine and heat to a boil.  Once it’s boiling, remove from heat and set aside.

On a large cookie sheet, place the baked scoops.  You can place them fairly close to each other, if needed.  Scoop in a little bit of the ground chicken mixture to each of the scoops.  Top with the shredded cheese and bake for 5-8 minutes.

Remove from the oven and top with lettuce or sour cream, if using.  Place on a platter and serve to your party.  Enjoy!

Ingredients

  • 1/2 medium onion chopped
  • 1 pound ground chicken
  • 1 package taco seasoning
  • 1 bag baked scoops
  • 15 oz can diced tomatoes drained and rinsed
  • 1 cup shredded cheese of your choice
  • lettuce torn or shredded
  • light sour cream optional

  7. Haha! That’s awesome that we were thinking the same way. I was actually thinking of making these again later and using turkey instead of chicken. Either way, they were delicious (hopefully yours were too) and so easy to make. We loved them.

  8. I made something similar for dinner last night! We used turkey instead of chicken though. I originally started using chicken and then accidentally used the wrong spice, and I thought Italian flavored nachos would be weird 😉
