If you have been following me for any length of time, you know that meal planning and eating healthy are my bread and butter. I make sure to go grocery shopping on Sundays with a crazy list in hand and buy everything I need for the week.
Since I have this blog, and work full time, I don’t have the time to sit at work not knowing what I’m going to cook for dinner that night. It just won’t happen. So, roundups like this are vital to helping me to prepare for the week ahead.

I really try to get dinner on the table in 30 minutes or less. Some recipes are a little more in depth, but I strive to hit that 30 minute mark every dinner.
